Melt butter in a large frying pan over medium heat, then add the garlic and cook until fragrant and starting to soften. Don’t allow it to brown.
Add the zucchini and cook for a minute or two until it starts to soften slightly, then add the Italian seasoning, salt, pepper, heavy cream, and broth. Cook, stirring until the cream is hot. Add the salmon and stir gently. Cook until the salmon is warmed through.
Transfer to a serving plate and garnish with fresh parsley and a lemon wedge.
