Blend coconut oil, Keto Chow, water, lime zest and juice, and rum extract together until smooth.
Fill the popsicle molds about halfway, then add a drop of the red and yellow food coloring (if using) to the remaining mixture and swirl to create color variation. Carefully fill the molds the rest of the way so the colors swirl together but the darker color remains mostly on top of the lighter color.
Freeze overnight.
To serve, loosen the pops from the molds by running them under warm water briefly.
Store any remaining pops in the freezer for up to three months.
